In Oaxaca this fruit is known as pitaya de Agusto. Stellatus is a robust species of stenocereus that grows and roots fast, even in slightly cooler conditions. The cactus grows as a medium tall columnar form with an attractive shape. The fruits ripen from August to November and has a sweet/tart flavor that is very refreshing. Each color has a different taste of course which is correlated with unique antioxidants. The red variety is certainly the most rich tasting something like pomegranate. These seeds are open pollinated.
