In Oaxaca this fruit is known as pitaya de Agusto. Stelatus is a robust species of stenocereus that grows and roots fast, even in slightly cooler conditions. The cactus grows as a medium tall columnar form with an attractive shape. The fruits ripen from August to November and has a sweet/tart taste that is very refreshing. Each color has a different taste of course which is correlated with unique antioxidants. The white variety might be the sweetest but having less complex richness of other colors. That's the compromise.
